The eternity of Xarel·lo: Parés Baltà – Electió 2004

“To date, we still don’t know how long Xarel·lo can ultimately age.” I’ve heard this oft-repeated about this white grape variety over the years, but the very first time I heard it was from Ton Mata several years ago during a tasting of their Turó d’en Mota, a sparkling wine of 100% Xarel·lo that’s aged for at least 10 years prior to release. I’ve tasted the wine as far back as their 1999, inaugural vintage and the wines, are still singing, but that’s often the case with sparkling wines as they’re picked with higher acidity and this just drives the wine forever. What about the still wines made from Xarel·lo?
