This is a fun release from this winery celebrating their 25th anniversary. Produced under the auspices of DO Cava, it’s 100% Pinot Noir. They’re not the only producer in the region to use this variety and the reason is that when harvested early, for sparkling production, it gives a wealth of acidity. As to whether this will continue going forward due to a changing climate, remains to be seen. But ultimately it offers up a crisp, citrus-driven sparkling wine that’s exceedingly fresh and pleasing to drink.
