Special Summer Darjeeling

There is a tannic, scorched-earth quality to a good Darjeeling and in this one I find this quality of crossing a just-harvested wheat field on a hot day. Earthy and invigorating, it is able to stay light and true to character while having a light astringency which would lead to excellent pairings with a number of foods that need to have their weightiness cut through.

Pairings: Butter scones, salmon, and just about anything with a good, voluptuous character.
