Gopaldhara Gold Darjeeling

For a summer I lived the second floor of my parent’s house which was little more than a built-in attic. The days were hot and full of woody aromas as the roof creaked and swelled around me. This tea takes me back to this.

Very much needing only three minutes of steeping, it gives off a lot of herbal and grassy notes. Of medium body, it doesn’t overwhelm the palate and could easily pair with many foods. Quite astringent overall and fills in the mouth a good deal.

Pairings: roasted lamb, spicy things, cumin, coriander laced deliciousness
