Avaata Supreme Nilgiri

I have to cross this overgrown field to get in to town on foot. Every so often they decide to actually cultivate it with wheat. The crop runs its course, is harvested, and then the first rains come. It’s here where I find this very high end, full leaf green tea.

The aromas are herbal but soft and delicate. The lack of brashness and pointed roundness gives something a butterscotch quality to it all, especially if not oversteeped. Light on the palate, it has a mild astringency that quickly fades in the finish. Well executed and pleasing.

Pairings: winter salad, beets, salmon
