Himalayan Bouquet

For some time now, I’ve realized that more than say Assam or Celyan, I need to pay a visit to Nepal to see what is happening in fine tea. I have no intention of flying within the country but consistently, some of the most enjoyable teas for me these days are coming from their Himalayan slopes and this one is no exception.

Wonderfully full leaves that present incredibly nuanced aromatics once steeped. Light tropical fruit notes with an overall crispness to the body of the tea and the finish. Think of it as a cold climate, gently-made Pinot Noir, ripe for your discovery.

Pairings: I want an aged, gentle cow's milk cheese with this. Good choice as a starter with a summer salad, lightly dressed in only olive oil and a pinch of sea salt.
